Best Lemon Pound Cake....Hands Down

I've only make pound cake twice in my life.  The second time being the other night.  But I've eaten quite a bit of it, so I consider myself qualified to bestow the title of 'best pound cake ever' to this recipe.  There's a little secret to it that makes it so delish and moist....here's the recipe:


Ingredients:
2 sticks butter, softened
3 cups sugar
6 eggs
1 cups sour cream or plain Greek yogurt
3 cup flour
1/4 tsp. soda
1/2 tsp. salt
1/2 tsp. baking powder
Flavorings: 1 1/2 tsp vanilla extract (which I used) OR 1 1/2 tsp lemon extract

Grease and flour bundt pan.  Preheat oven to 325.  Combine dry ingredients and set aside.  Cream butter and sugar.  Add eggs, 2 at a time.  Whip them well.  Add the sour cream (or yogurt) and mix on low.  Add flavorings and flour mixture.  Beat 10-15 minutes (that's the secret).  Bake for approximately 1 hour and 25 minutes.


For icing:  Just make a simple butter, milk, vanilla, powdered sugar icing.  Add 2 Tbls lemon curd to it.  Whip well.  Drizzle over cooled cake and enjoy!!!
